Probably the best pasta recipe in the world (probably)
Spaghetti a la puttanesca with Swedish meatballs!

This is a pasta recipe that we like to make when we do not have a lot of fresh ingredients at home or when we are just not in the mood for the typical home version of pasta Bolognese.

It is basically a variation on spaghetti a la puttanesca that we make with the ingredient we have available, and it is also easy to make it vegetarian. To quickly chop all the ingredients I use a food processor. This recipe is for 4 to 6 servings, depending on the size.

These are the basic ingredient I stock to make this sauce:

* a can of diced tomatoes
* a small can of tomato paste
* a large jar of pasata if you need to serve more, else another can of chopped tomatoes
* half a small jar of green olives
* half a small jar of black olives
* two or three teaspoons of capers (or the entire little jar)
* 5 to 6 anchovies in oil (or more if you like the taste)
* 2 or 3 cloves of garlic
* 1 red pepper or some dried pepper (cayenne pepper is also fine)
* one onion

All ingredients, just leave out what you don't have or like

Extra ingredients that we like to add:

* Swedish meat balls (around 6 per person)
* rucola to put on top

And of course 500 grams of any pasta is fine but if I can choose I prefer linguine.

Start by chopping the onion fine and sweat is of in a good amount of olive oil and add a bit of salt. Add the finely chopped garlic and add the tomato paste, bake it a bit together with the onion. Cut the anchovies a bit and add it to the pan, give a stir until the fillets start to dissolve. Finely chop the red pepper and add it, if you don't have one just skip it and use some cayenne pepper when seasoning your sauce.

Now add the olives and capers to the food processor and give them a quick chop so you have some large and smaller bits, make sure it does not become a paste. Add the mixture to your pan and add the canned tomatoes and pasata. Let the sauce gently simmer. This is a good time to get some water boiling for the pasta if you like to eat soon.

When you are ready to eat season your sauce with salt, pepper and cayenne if you like it a bit more spicy. Heat up the Swedish meat balls and put the rucola on the table!

If you do not have some of the ingredients then just leave them out, that is fine! Make it your sauce!
